  • 3 lbs fresh organic tomatoes
  • ½ finely chopped onion
  • 2-3 cloves pressed garlic
  • ½ stick unsalted butter
  • 2 ounces good vodka
  • 3-4 ounces of heavy cream
  • Salt & pepper to taste
  • ¾ pound of Penne Pasta

  1. Heat sauté pan and melt butter until it foams.
  2. Add onions and stir frequently for 3-5 minutes – do not let onions brown.
  3. Add pressed garlic and stir for 1-2 minutes
  4. Add finely chopped tomatoes & salt & pepper to taste.
  5. Simmer and cook for 15 minutes.
  6. Add vodka & cook for 5 minutes.
  7. Add heavy cream and bring mixture to a boil for 5-10 minutes (mixture will reduce).

 Serve immediately over cooked penne pasta.
