Courtney’s Oven Fried Chicken
Oven Fried Chicken - A healthy alternative for when you're craving greasy fried chicken!
2 ½ - 3 lbs chicken legs or thighs with skin and fat removed
½ c. buttermilk
1 tbsp Dijon mustard
1 tsp hot sauce
2 cloves garlic, minced
½ c. whole wheat flour
1 ½ tsp paprika
1 tsp dried thyme
1 tsp baking powder
Pinch of salt
Olive oil cooking spray
1. Whisk together buttermilk, Dijon mustard, hot sauce, and garlic in a shallow dish
2. Add chicken and turn to coat
3. Cover and marinate for 1-8 hours
4. Preheat oven to 425º
5. Combine flour, paprika, thyme, baking powder, and salt in a zip top bag
6. Place 1 or 2 pieces of chicken into bag and shake to coat
7. Shake off excess and place on a wire rack over a cookie sheet
8. Spray coated chicken with olive oil spray
9. Bake until golden brown, 40-50 min.
