If anyone needs any mint, I have a jungle of it growing in our garden in the box.
- 4 Mahi Fillets
- ½ c mayo
- ¼ c feta
- 3 TBSP fresh mint, chopped
- 2 TBSP fresh dill, chopped
- 1 tsp lemon juice
- salt and pepper to taste
- 8 thin slices of lemon
- olive oil spray
Preheat broiler with rack 8 inches from broiler.
Line cookie sheet with parchment paper.
Place fish skin side down on parchment paper and season with salt and pepper.
Stir together mayo, feta, herbs, and lemon juice in a bowl, and spread mixture over each fillet.
Top each fillet with 2 lemon slices per fillet.
Spray olive oil over each fillet.
Cook 14-16 min.
