- 1 box long grain & wild rice mix (Uncle Ben's, etc.)
- 1 large can of chopped turkey breast (found in the tuna aisle - it looks like a tuna can - get the big one)
- 1 can of water chesnuts (about the size of a tuna can)
- 1 can of cream of mushroom soup
- real mayo, large green olives - sliced, black pepper, garlic powder, bread crumbs, parmesan cheese
 
- prepare rice on stovetop
- combine next 3 ingredients into 9x12 (or size thereabouts) casserole dish. (drain & rinse turkey before adding)
- stir in 1-2 tablespoons of mayo to mixture. When rice is done and all liquid is absorbed, pour into mixture, add chopped green olives, a couple shakes of pepper and garlic powder, and stir all together.
- top casserole with bread crumbs and parmesan cheese
- cover & bake at 400 degrees for 30-40 mins until warm & bubbly
