"Great as an appetizer, a main course, or served over a salad!  If you decide to serve the shrimp over a salad, make a little extra of the marinade and set aside as a vinaigrette."


1-2 lbs medium shrimp, peeled and deveined

Zest of 1 lemon

1 tbsp dill

½ c. lemon juice

2 cloves minced garlic

½ c. olive oil

1 tsp salt

1 tsp pepper

1.        Whisk together all ingredients, except shrimp

2.        Add shrimp, cover, and marinate for 1-4 hours

3.      Thread shrimp onto skewers – if using wooden skewers, soak the skewers in water for 30 min. before threading on shrimp

4.     Grill on high, direct heat, turning once, for 4-5 min. total.
