Country Style Potato Skins

"Always a winner - no leftovers!  I usually make a low fat version if I bring it for a girls outing.  I thought it would a great one to serve during March Madness Month or St. Patrick's day."

  • 1 bag of country style potatoes (thawed)
  • 2 eggs
  • salt/pepper
  • 16 oz cream cheese (you can use lowfat or nonfat)
  • 2 cups shredded cheddar (regular or lowfat)
  • package of real bacon bits (Hormel or Oscar Meyer)
  • chives (finely chopped)
  • Mini muffin tins

Bonnie's Striped Delight

"Great dessert to take to a pot-luck."

  • 35 Oreo Cookies - finely crushed (about 3 cups)
  • 6 tbsp. butter or margarine melted
  • 1 - 8 oz. pkg. cream cheese softened
  • 1/4 cup sugar
  • 2 tbsp. cold milk
  • 1 tub (12 oz) Cool Whip - thawed and divided
  • 3 1/4 cup cold milk
  • 2 pkgs. (4 serving size) instant chocolate pudding

Mix crushed cookies and butter.  Press firmly into bottom of 9x13 pan and refrigerate for 10 minutes.

“A versatile dish that can be made either for dinner or for breakfast/brunch.  The quiche base works well with other ingredients, so if you don't like crab or the veggies, substitute whatever you want!”

Easy Turkey & Rice Casserole

- 1 box long grain & wild rice mix (Uncle Ben's, etc.)
- 1 large can of chopped turkey breast (found in the tuna aisle - it looks like a tuna can - get the big one)
- 1 can of water chesnuts (about the size of a tuna can)
- 1 can of cream of mushroom soup
- real mayo, large green olives - sliced, black pepper, garlic powder, bread crumbs, parmesan cheese
