Easy Beer Bread

This is soooooooooo easy......I found this on a post-it note and have no idea who gave me the recipe but it is very yummy.

  • 3 cups self-rising flour
  • 3 tbls sugar
  • 1 can beer
  • 1/2 stick butter (melted)
Mix flour, sugar and beer together. Pour into bread pan (spray with cooking spray). Pour melted butter over top of dough.

Preheat oven to 350 degrees. Bake 45 minutes or until bread browns and looks yummy. 
 

Aunt Jeanne's Greek Style Baked Chicken

This is a yummy chicken dish that my Aunt Jeanne shared with me.  Use fresh parsley and mint for the best flavors - Kristin G.

Preheat oven to 375 degrees.
  • 4 chicken breast halves (boneless & skinless)
  • 3 roma or plum tomatoes (diced)
  • 2 tbsp. parsley
  • 1/2 tsp of dried mint or 1 tbsp. of fresh mint
  • 1/2 tsp. oregano
  • Grated pepper to taste
  • 2 cloves of garlic (finely chopped)
  • 4 tbsp feta cheese
  • 1 tsp. olive oil

Artichoke Chicken

Prep Time: 10 Minutes
Bake: 30 minutes

1 (14-oz) can water packed artichoke hearts, drained and chopped
3/4 cup grated Parmesan cheese
3/4 cup mayonnaise
1/2 tsp garlic powder (or use fresh minced garlic)
4 skinless, boneless chicken breast halves (sliced in half to create 8 thin pieces)

Slow Cooked Ribs

Submitted by me, Kristin G. (liked the rhyme on that one).  My Mom gave me this easy recipe and it has been a winner each time I make them.

  • Slab of ribs
  • Montgomery Inn BBQ sauce (or any other BBQ sauce you like)
  • Salt & Pepper the ribs first or use Montreal seasoning on them
  • Cover ribs in BBQ sauce (reserve some for later to dip ribs in)
  • Cover with foil
  • Bake at 325 for 3-4 hours
  • Ribs should fall off the bone and be very yummy
  • Heat up reserve BBQ sauce to pour over ribs and enjoy!

Sweet Bacon Crackers

INGREDIENTS
  • 36 buttery crackers such as Keebler Club® Crackers
  • 12 slices bacon, cut into thirds
  • 3/4 cup packed light brown sugar

DIRECTIONS

Preheat the oven to 250 degrees.  Line two rimmed cookie sheets with aluminum foil (the non stick foil works great).

"This was a really easy recipe.  You do most of the prep work in the morning then put it in the slow cooker and you get to enjoy the yummy smells all day long.  I served it with refried beans (put in a dish and microwave) and spanish rice."

London Broil - Great Marinade!

"This is a great marinade for top round steak - serve with fresh steamed broccoli, some crusty bread and a starch and you'll be good to go.  If you have any extra, you can make great steak sandwiches the next day."

  • 1 1/2" to 2" thick top round steak - no bones
  • 1/2 cup soy sauce
  • 3 tbsp ketchup
  • 1/2 cup fresh lemon or lemon juice
  • 3-4 garlic cloves chopped
  • 1/2 cup oil

Citrus Shrimp Tacos with Roasted Tomatillo Salsa

Citrus Shrimp Tacos

  • 1 red onion, thinly sliced
  • juice of 2 limes
  • 2 TBS. salt
  • 1 1/2 lb. large shrimp, peeled & deveined
  • 1 clove garlic, minced (about 1 tsp.)
  • 1 serrano chile, thinly sliced (I used a can of diced chiles from the mexican section at grocery store)
  • 1 cup orange juice
  • 2 TBS lime juice (about 1 lime)
  • 2 TBS lemon juice
  • 2 TBS honey
  • 1 TBS annato spice (left this out because I couldn’t find it anywhere)

Tomato Vodka Sauce

  • 3 lbs fresh organic tomatoes
  • ½ finely chopped onion
  • 2-3 cloves pressed garlic
  • ½ stick unsalted butter
  • 2 ounces good vodka
  • 3-4 ounces of heavy cream
  • Salt & pepper to taste
  • ¾ pound of Penne Pasta

  1. Heat sauté pan and melt butter until it foams.
  2. Add onions and stir frequently for 3-5 minutes – do not let onions brown.
  3. Add pressed garlic and stir for 1-2 minutes

Thai Turkey Tacos

Thai Turkey Tacos
 
  • One pound lean ground meat or turkey (I always use turkey)
  • 2 tablespoons grated ginger or 1/2 tsp dry ginger
  • 1-3 garlic clove, peeled and crushed
  • 1 can chopped water chestnuts
  • 1/2 red bell pepper, chopped
  • 1 small onion, thinly sliced
  • 2 cups coleslaw mix with carrots
  • Cilantro for garnish

  • 1-2 tsp sesame oil
  • 4 Tablespoons of soy sauce
